Veal Pot Roast
4.5 lb. veal roast
1 tsp dry mustard
1 tsp poultry seasoning
2 tbsp brown sugar
1 tsp salt
1/4 tsp pepper
1 tbsp flour
3 tbsp oil
1 bay leaf
3 tbsp cider vinegar
2/3 c. onion, sliced
1/4 c. water
Combine mustard, poultry seasoning, brown sugar, salt, pepper and flour. Rub into roast. Heat oil and brown roast on all sides. Add remianing ingredients. Cover and simmer on oven rage 2.5 hours or until tender. Turn twice.
